Choose your own adventure for a holiday hot chocolate (and bonus sugarfree whipped cream)

Not sure about you, but I was getting a little sick of hearing about hot chocolatey things, candy canes, holiday Starbucks this/that, etc. and then doing the math in my head for what sort of roller coaster insulin torture I’d have to endure to participate. At the end of the day, IMO, NOT WORTH IT.

But, the mission of SugarFree Mixology is that WE DO NOT COMPROMISE, and I’m kinda stubborn. So, after a little taste testing and mixing things around, here’s my answer for how to play, and I’ve laid it out in a semi- “choose your own adventure” manner. The base is hot chocolate, of course – but what happens from there is up to you. You can flavor it and/or spike it (always nice if you’re trying to deal with family and could use a boost… but you didn’t hear me say that). And I’ve made some suggestions about flavors I think will go well together.

You should most DEFINITELY top this off with my sugarfree whipped cream recipe, which I included below.

CHOOSE YOUR OWN ADVENTURE HOLIDAY HOT CHOCOLATE (carbs estimated in parens by each item)

Hot chocolate ingredients (makes roughly one drink):

  • 1 cup unsweetened almond milk (1g)
  • 1/4 cup half and half (2g) -OR- heavy cream (9g)
  • 1/4 cup low sugar chocolate chips (Choczero or Lily’s brand is good) (~12g) -OR- 1.5 tbsp unsweetened cocoa powder (4.5g)
  • 1-1.5 tbsp granulated Stevia (if you’re using chocolate chips, I recommend 1 tbsp; if using cocoa powder I recommend 1.5 tbsp)
  • 1/4 tsp vanilla extract

Spiking options (1.5 oz for all):

  • Bourbon
  • Whiskey
  • Rum

Flavoring options (0.5 oz for all):

  • Espresso with cinnamon spices (best with whiskey or rum)
  • Sugarfree irish cream syrup (best with bourbon)
  • Sugarfree s’mores syrup (best with whiskey)
  • Sugarfree peppermint syrup (best with rum)

Directions:

  • Add almond milk and cream to saucepan and stir on low heat, until heated through
  • Slowly add chocolate chips -OR- cocoa powder and melt/mix thoroughly
  • Add Stevia (1 tbsp if using chocolate chips; 1.5 tbsp if using cocoa powder) and mix until crystals are fully melted/absorbed
  • Remove saucepan from heat. Pour mixture into mug
  • Add vanilla extract and any sugarfree syrup and alcohol choices
  • Top with sugarfree whipped cream (recipe below)

SUGARFREE WHIPPED CREAM – 2 CARBS/SERVING

Ingredients (makes like 25 servings):

  • 1 cup heavy whipping cream
  • 3/4 tbsp vanilla extract
  • 3 tbsp Truvia confectioner’s sugar

Directions:

  • Stick a mixing bowl in the freezer for a couple of minutes or until nice and cold
  • Combine all ingredients in bowl
  • Using mixer or whisk, beat until soft peaks form
  • Eat entire thing bc it is SO GOOD, then repeat
